Shrimp with Cilantro and Lime

1 ¾ lbs. large shrimp, peeled and deveined
2 T fresh lime juice
½ tsp ground cumin
¼ tsp ground ginger
2 garlic cloves, minced OR 2 tsp bottled minced garlic
1 T olive oil
¼ c chopped fresh cilantro
1 tsp grated lime rind
½ tsp salt
¼ tsp black pepper

Combine first 5 ingredients in a large bowl; toss well. Heat oil in a large nonstick skillet over medium-high heat. Add shrimp mixture; sauté 4 minutes or until shrimp are done. Remove from heat; stir in cilantro and remaining ingredients.
