Shrimp Gumbo

4 ½ quarts water
Roux – thickness to your taste
1 can rotel tomatoes
1 can tomato sauce
7 medium pods garlic
2 very large onions, sautéed
1 sweet pepper
2 strong peppers
3 – 3 ½ lb. shrimp
Onion tops
Seasonings to taste

Put water, roux, tomatoes, tomato sauce, garlic, sautéed onions, parsley and peppers to a boil for 2 to 2 ½ hours.

Add shrimp and onion tops. Boil for an additional 20 to 30 minutes. Season to taste.

Can add oysters at very end as well, but only boil for 1 minute.
