Shrimp Fried Rice

2 c cooked shrimp, chopped
2 T. soy sauce
3 c boiled rice
¼ c oil
2 eggs, lightly beaten
4 oz can mushrooms
1 tsp salt
Freshly ground black pepper
½ c scallions, chopped

Fry shrimp in oil in deep frying pan for 1 minute, stirring constantly. Add eggs, mushrooms, salt and pepper, and fry over medium heat for 5 minutes, stirring constantly. Add rice and soy sauce and fry for 5 minutes, stirring frequently. Mix with chopped scallions. Serves 6.
