Caribbean Shrimp Bruschetta

1 pound shrimp, cooked, peeled & coarsely chopped
1 cup shredded Monterey Jack cheese
1 mango, peeled and chopped (1 cup)
¼ cup finely chopped red bell pepper
¼ cup sliced green onion
2 T lime juice
½ tsp McCormick® allspice, ground
½ tsp McCormick® thyme leaves
¼ tsp McCormick® red pepper, crushed
¼ tsp salt
1 loaf French bread, cut into 32 (1/2 inch) slices
Olive oil

We enjoyed making
(and eating!) this one recently.
Here is a shot of the finished product.

Preheat oven to 400. Mix shrimp, cheese, mango, bell pepper, green onion, lime juice, allspice, thyme, red pepper and salt in large bowl until well blended.

Place bread slices on foil-lined baking sheet. Brush lightly with olive oil. Bake 6 to 8 minutes or until lightly toasted, turning once.

Spoon shrimp mixture evenly onto bread slices. Bake 8 to 10 minute or until heated through and cheese is melted.

Makes 32 1-piece servings.
